Sunday- apps for dinner: taquitos, chili dip and guacamole. I'll probably make something else too but not sure what! Monday- butter chicken and rice Tuesday- Homemade gf Mac and cheese with cauliflower cheese sauce Wednesday- SO is making chili Thursday- vegetable soup Friday- quesadillas

So I have a list and we already went shopping but I have no clue what day I'm going to make things yet! - quinoa chili - black bean burgers - pasta with roasted tomatoes and chickpeas - caramelized onion quesadillas - lentil loaf with mashed potatoes
Today for the Super Bowl I am making orange black bean taquitos, sweet and sour meatballs, and mozzarella bites. I also bought a box of Farm Rich potato skins. And I am pretty sure I am going to have to go out and buy something sweet. I keep saying no sweets in the house but constantly cave
Saturday- caribbean pork loin, garlic couscous, broccoli and carrots. Sunday- pizza tonight! Just a frozen one, with salad. Monday- Chili, garlic bread, salad Tuesday- Egg salad sandwiches, basil tomato soup Wednesday- Out! Taking DD to Friendly's. She has dentist (cleaning) appt and this is her "bribe" so she has something to look forward to, sigh. She HATES the dentist. Thursday- Pasta w/ meatballs, garlic bread, salad Friday- Chicken & veggie (TONS) stir fry over rice
I'm off the hook until Wednesday. So wedsday will be keilbasa probably a mashed potato Thursday will be chicken Alfredo I have no idea what well do Friday or Saturday.

The curry paste isn't homemade bit otherwise, yes. I posted 2 versions in another thread. One I have tried and one I haven't. Give me a sec and I will copy them over.
I must have missed them before! Saving, both look super good (admittedly, without the tofu in the first- we aren't fans, so I'll just leave that out or maybe even add a little chicken?). Thank you!!

Yeah I am sure you could do chicken or shrimp, or add more veggies. Enjoy!

Last night we had quesadillas, potato skins, & mozzarella sticks.. aka regret all things tomorrow. Tonight is definitely leftovers. We have a lot. There might be a chance Tuesday will also be a continuation of leftovers with something else. We'll figure it out tonight.

I haven't figured out days ww're eating what but we're having for a few of the nights: -Chicken cordan bleu with green beans -Eggplant roll ups w/ garlic bread -Sausage, zucchini and pepper pasta -Shepherd's Pie

Su: Sloppy Joe Pasta (basically leftover hamburger bbq mixed in with whatever pasta I choose) M: minute steaks, cheesy broccoli rice, steamed veggie Tu: TBD, but it's narrowed down to Subway, pizza, or spaghetti W: ham steak, buttered noodles, green beans Th: takeout F: chicken nuggets & baked fries Sa: TBD
Saturday - homemade spanakopita and falafels Sunday - cheesy mac and cheese with spinach Monday - avocado, veggie bacon, provolone sandwiches with soup Tuesday - Fish, rice, and veggies (squash for DH) Wednesday - Cheesesteaks and salad (portobello mushroom for DH) Thursday - Linguine with pesto sauce and salad Friday - potato and bean patties with veggies
Monday - chicken tortilla soup Tuesday - out Wednesday - tacos Thursday - leftovers if it's just DS and me or out if DH joins us (DH is leaving Thursday night so I'm not sure on timing) Friday - we'll be OOT

chapter79 so an update. I made number one (the damn delicious one) and it was damn delicious . I will be retiring the other recipe and sticking with this one.
here are some adjustments I did: I added thinly sliced 1/3 zucchini and 1 bell pepper. I quickly fried the veggies and tofu with just the curry paste before adding the coconut milk. I added another tablespoon of curry paste once everything but the spinach was mixed in and simmering. I omitted chili pepper.
Maybe because of the extra veggies, I didn't have nearly enough sauce. Someone brighter than me would need to do the math to add maybe another cup of liquid, while ensuring the right balance of flavour . I would consider cooking the vermicelli separately and just mixing them in each bowl. There was a huge clump of vermicelli in the middle that was hard to spoon up around. (or maybe break up the vermicelli so it mixes easier?)

You're wonderful, thank you so much! Made note of changes. I'll figure out adjustments to do more sauce, because my H would likely prefer more over not enough. And I'll probably do extra veggies because I'll omit the tofu and that may suck more liquid out. Can't wait to try it!
