I love this thread! Im proud of myself this week; I was resourceful. I boiled chicken breasts yesterday, and used one for DD's food, and the others for last night's and tonight's dinner.
Last Night: Chicken and Wild Rice Casserole Mon: Chicken Enchilada Verde Skillet Bake Tues: Spaghetti and Salad Wed: Steaks with Baked Potatoes and Lemon- Garlic Asparagus Thurs: Pizza Night Fri: Kitchen Closed- out to eat with friends
Thursday/Friday/Saturday - leftovers or whatever I want bc DH will be traveling for work. Unfortunately I can't drink to excess like I used to when he traveled bc responsible adult now. Boo.
Monday: French onion soup and cheese toasts Tuesday: grilled steak, baked sweet potatoes and steamed broccoli Wednesday: ricotta and spinach tortellini Thursday: shepherds pie Friday: honey mustard pork with apples and rice Saturday: going out! Mexican, most likely Sunday: slow cooker pot roast with vegetables and crescent rolls

So boring, but..
Today: Pork Chops (I finally did the apple thing ala jessila, I believe?) Tuesday: Leftover Chili or tacos Wednesday: Soup & Salad (pre-made chx noodle from the deli) Thursday: Finish leftovers Friday: Date night out!

Yeah...Haven't planned anything really. We have a few frozen skillet meals in the freezer. I also have some smoked sausage I need to do something with.

So this is the chicken enchilada week I see!
Sunday- chicken enchiladas Monday - turkey tacos Tuesday - tomato casserole and zucchini pasta Wednesday - chicken breast stuffed with red pepper, feta and pesto, asparagus and rice Thursday - black bean tacos with guacamole Friday - probably pizza Saturday - whatever I have left in the fridge and pantry haha
Tonight: chicken bites and fries Tomorrow: sausage and Mac & cheese (yes, pieces of sausage cut up in mac. It's my H's favorite and his semester starts tomorrow!) Wednesday; ham BBQ with zucchini fries Thursday: likely eating at my mom's Friday: taco soup Saturday: leftovers
I came in to say how awed I am by people who meal plan so far in advance. But then I realised that I know I'm making quiche Lorraine today, I'm out tomorrow, we'll probably have takeaway curry on Thursday and some kind of pasta on Friday. So on some level I apparently do plan, albeit not formally.

Last night we had leftover stuffed shells from Sunday (and STILL had enough leftover to go in the freezer for another meal - win!) Tonight is chicken fajitas Wednesday is teriyaki chicken - it's one of my freezer meals I just need to dump in the crock pot before work. Thursday we'll eat at my mom's house, she's making cabbage rolls, my favorite! I have no clue what Friday holds - depends on if I make it to the grocery store or not. In the winter I always keep an "emergency pizza" in the freezer for these occasions.

We don't quite meal plan like this, what we do is buy a bunch of meat at costco and freeze it in individual portions. Then we pull something out the night before and make it with some type of veggie (either frozen or fresh) or salad, and sometimes rice. This is mostly for the weeknights, and then we usually plan a fancier meal or two for the weekend.
