So going corn and dairy free sucks because both are in so much, but it's actually easier than it seems. You pretty much need to adjust to eating mostly whole foods and avoid a lot of the processed stuff. Eat a lot of healthy fats. Avocado, nut butters, nuts. Avocado oil is really good to cook with, as is coconut oil. Buy cans of full fat, unsweetened coconut milk to use as a substitute for milk. I make a chicken pot pie filling that is dairy free with coconut milk and thickened with tapioca starch, and you can't tell at all. That's also a substitute. If you need corn starch, you can use tapioca starch (or it may be called flour), potato starch, or arrowroot flour. A lot of grocery stores are starting to carry these things more and more so they should be easy to find. Make chicken salad with avocado instead of mayo. Basically, if you like avocado, eat it with everything. Banana and cashew butter is really good.

I tried dairy/soy free for 2 weeks to see if it would help DD2. It did not, but I learned a lot. About 50% of kids who are allergic to milk protein are also allergic to soy protein (I think it's been a while). So if I were you I'd give it 2 weeks off soy also, even thought that further reduces the stuff you can eat.
I did a lot of googling for dairy/soy free and found a ton of MSPI references. I'm afraid I'm no help on corn free. However there are a slew of websites out there geared towards families with allergies/sensitivities that break down recipes by what they are free of.
I agree with cdseno that avocado and nuts are a great way to get calories in. I'd also add seeds. If you can handle the taste (I can, DH can't), try flax in oatmeal. Fibre plus good fats. I loooooove snacking on roasted sunflower seeds. Seeds and nuts aren't super cheap, but they are a great quick snack to pack a punch. DH is a big peanut fan too. As long as you think your DD isn't nut allergic those are good options. In terms of getting fat in there are a ton of coconut products also (very saturated fat high, but sounds like you need calories). Coconut yogurt tastes pretty good if you like yogurt. You can find a ton of paleo recipes using coconut products - in fact paleo recipes might be a good resource for you since pure paleo would avoid both corn and dairy.
AC had MSPI, milk and soy protein intolerance. I basically ate meats, fruits, and veggies for about 10 months until she outgrew it. It's really hard but it forced me to make healthier choices and pre plan our meals and snacks better.

Look up Paleo recipes. I love the Paleo Parents - I'm a picky eater and really love some of their recipes! Their chicken nugget recipe is my fav (they call it fools gold) and their book Eat Like A Dinosaur has awesome kid friendly recipes. Which I like because apparently I eat like a kid

I was dairy free while breastfeeding DD which is honestly not hard, just sucks sometimes. I have not had to be corn free and I can imagine its extremely difficult. Sorry that you are having to do both Pink, but hopefully you can get little Ms Pink feeling better soon!
I have been dairy-free for a year now. Most of the recipes I have found have been on Pintrest searching “dairy-free” or “Paleo”. The rest of my family eats dairy so to avoid making multiple meals I have found a few tricks: -Cooking with almond milk or coconut milk (I have found Aldi’s to be the cheapest place to get almond milk. Costco also sells it fairly inexpensively in multi-packs. My Wal-Mart also carries the Thai Kitchen coconut milk brand for $2 cheaper than my local grocery store. You can also buy coconut milk cheaper on Amazon pantry than in most grocery stores -Making a lot of meals where dairy can be easily added after it’s prepared (i.e. Tacos, quiche, stuffed peppers, etc.) -Taking the time to do meal planning and preparation -Keeping a food diary (I did this for about a month at the request of my allergist. I was not super thrilled with the idea initially but it was helpful to track what foods I had reactions to)
I have dairy-free and paleo Pintrest boards with tons of recipes. If you are interested PM me and I can give you my info so you can access the boards. It was an adjustment initially and can sometimes be a challenge when we go out to eat but going dairy free hasn’t been very difficult. Ben and Jerry’s is releasing dairy-free ice cream this month so there’s that to look forward to

Also I don't know if these products are corn free but I really loved the Tofutti brand. I used their cream cheese and sour cream all the time. Added to foods and in baking.
