Recipe Help for friend in need

Hi ladies, maybe you can help me with this. 
I have a friend who has been in treatment for a brain tumor for about 9 months. She is not able to drive, so friends set up a website where we can sign up to bring her food and my day is coming up. 
She is no longer undergoing any treatments that make her sick, so I think she is able to eat pretty much whatever (aside from hating onions). I am a terrible cook with the exception of pasta. So I was going to do a lasagna or stuffed shells. However, I'm looking at the website and EVERYONE is doing pasta (easy to make in bulk, you can freeze it, it does make sense). She was really into healthy living even before her illness, so I'm betting that after a certain point, she is ready for something other than carbs and cheese. 
Does anyone have a good idea for a meal I can bring that is healthy, a good size so they have leftovers, and not too hard for someone (me) who is truly useless in the kitchen?

Enchiladas might work. You could fill them with shredded chicken and veggies (instead of just cheese, mmm my favorite) for the added health kick. They aren't too hard, especially if you buy premade enchilada sauce. Just a bit of assembly. A big pan can be frozen well, too.

I'm bringing a family a meal on Monday and I always bring the same thing. There's a Mediterranean place near us (Zoe's kitchen) that does big family meals-I get chicken marinara and orzo with a salad. It's healthy, has leftovers, easy, and people always comment that it was one of their favorite meals, so I bring it every time now. I know it's not homemade, but tastes homemade and I spend about as much as I would cooking a meal. I usually throw in some homemade cookies.

I probably sign up to bring at least one meal a month to someone in our church, so ordering this meal makes me more likely to commit to do it more, because it barely takes any time!

Not a bad idea txmommy14, I'd just have to find a decent takeout place around here. It is mostly sitdown only or crappy fast food.

Pulled pork is so easy if you have a crock pot. You could to that with some rolls, potato/macaroni salad from the store and a green salad or something.

Do you do Pinterest? There are a ton of freezer meals on there that are easy and you just pop in the crockpot. Or, perhaps a roasted chicken with veggies/salad and potatoes of some sort. A big pot of soup or stew or pasole is a good choice.

I usually bring chicken tortilla soup with the fixings. 1 box chicken broth. 1 jar chipotle salsa 1.large can of chicken in broth. 1 drained can if corn. 1 rinsed can of black beans. Top with cheese chips sour cream and avocado.

You could do a chili, either with meat or vegetarian. Bring some cornbread, a container of sour cream, and some shredded cheese to go with it.

Greek salad with chicken and rice and store bought tzatziki. I was also going to say enchiladas... And now I want enchiladas.

Could you prep a stir fry in Freezer bags (veggies, meat, cooked rice, sauce) so all she has to do is saute it all together?

I'm not much of a cook, so I don't have any ideas, but everyone gave delicious suggestions.

Vegetarian shepards pie is good. I make it with mushrooms and lentils as the base.

It sounds like she might be casseroled out. I would think a roast chicken, grilled breast or kabobs might be good.

Late to the party, but crockpot baked potato soup and cornbread is super easy and freezes well. Super easy, makes a lot, and can be as healthy or as unhealthy as you want it to be based on what toppings you add.

We love this. Easy to make. Just make sure to get the minute rice, cook it in the microwave, then mix it in.
