We did a massive grocery shop today, which was almost a month overdue. Been in full on survival mode, and I'm now looking at a fully stocked fridge freezer and cupboard, I'm actually looking forward to making meals out of this! Nothing planned just yet though..
* sauté zucchini , red/ green/yellow bell peppers, frozen spinach, black beans in evoo and seasoned with chili powder, cumin, black pepper and salt. Add a sprinkle of shredded cheddar and 1 tbsp of red enchilada sauce
Layer a casserole dish: veggie mix , cheese, corn tortillas, enchilada sauce, repeat. Bake for 20 min on 350
I never did make the taco pizza last week, so that's tonight.
M - leftovers T, W - Garlic lemon double-stuffed chicken. There's not a thing healthy about it, but it's delicious. We will have steamed broccoli on the side to counter all the cheese. Recipe: allrecipes.com/recipe/68380/garlic-lemon-double-stuffed-chicken/

It all depends on when I make it out for a full grocery run. Assuming we get that done monday morning, we will have: -chicken and noodles and a side of veggies -pot roast -chicken crescent roll ups -possibly tacos
Sun - Chicken noodle soup Mon - Roast in the crock pot. I do the recipe where you mix 1 C water with 1 pack each Italian dressing mix, Ranch dressing mix, and brown gravy mix. Then I also throw in some onions and potatoes. All I need to do is steam broccoli when I get home and dinner is done - yum! Tues - Leftovers Wed - Orange chicken Thurs - Leftovers, or going out Fri - Grocery shopping again
carrots let me know what you think of that crockpot tortilla soup...no offense to who posted it (don't remember who), but I made it and HATED it.
Could just be me being picky and weird.
I was one of the ones who posted it - I think one thing I forgot to mention was I don't use straight water like the recipe says, I use more chicken broth. And then top it with lots of avocado, cheese, and tortilla chips, which I think is what really makes it for me. DH isn't the world's biggest fan of still, though honestly - he tolerates it, but refuses to eat the leftovers. No offense taken though, not everyone's going to love everything

Can you share the veggie meatloaf recipe again please??
hmmm @jimbobcooter will probably have to post her recipe. I just eye ball mine I don't follow a specific recipe.
I basically sauté veggies (green and red peppers, onion and mushrooms probably) and set aside.
Then in a bowl I make the meatloaf. Ground beef, an egg, garlic, breadcrumbs, milk, worchestire sauce and salt/pepper. Add the veggies and mix, then add to the pan. I top with chili sauce but you could do ketchup too.

I mostly eyeball mine too but it's roughly 1 pound ground turkey, 1 egg, 1 cup of oatmeal, 1 small zuchinni, about 1 cup of spinach, one roma tomato, BBQ sauce to taste (about 1/4 bottle per pound? and I like mustard based for meatloaf). I chop the veggies in the food processor then mix it all together. Bake for about 1 hour at 350. Cook longer if you double it into a larger loaf pan.

I posted one too. I usually omit and add a couple of ingredients to my liking. No offense taken either- we all have different taste preferences!
I never contribute to this thread because H does all the cooking in our house, but I wanted to brag on the awesome turnip fries he just made. Jude loved them!
Kristykristyleelee , the soup turned out good! H and I both liked it. We did pile on the toppings and I made a few substitutions (used Rotel instead of whole tomatoes, spicy enchilada sauce).
I posted that one! It's my go to tortilla soup. I'm so happy Yall liked it and made it your own. I purée the tomatoes and also add Ro- tel. Like someone above mentioned, I use all chicken broth instead of water.
So in this thread I have learned that meatloaf apparently doesn't consist of a loaf of hollowed out bread with meat layered inside it. I had no idea :-)
