I think I have perfected my pot roast recipe, at least for our taste.
5 lb chuck roast 2 1/2 cups baby carrots (this is my favorite part) 3 shallots, peeled and left whole 6-8 yukon potatoes, quartered 1 cup smoked porter 1 cup beef stock 2 tbsp low sodium worcestershire 2 tbsp butter 1 sprig rosemary 5 sprigs thyme 6 garlic cloves, smashed 1 1/2 tsp salt 1 tsp pepper
Roast in a 300 degree preheated oven for 3-3 1/2 hours. When finished cooking, strain liquid into a sauce pan, bring to a strong simmer and reduce for about 8-10 minutes. Next, slowly add a slurry of cold beef stock and 1 tbsp corn starch to the liquid while whisking until thickened. Pour over the pot roast and serve.
