Stir fries and fajitas are both good for hitting all the food groups (well, my stir fries don't use dairy, but a glass of milk with supper makes up for it) plus being veggie heavy. I chop all veggies as I buy or pick them, so I just have to cut my meat before cooking, if I didn't already cut it the night before. Quick, easy, flavorful, flexible (can use various meats, veggies, and such based on what you have one hand). I make a curry chicken and rice dish which is similar in the above criteria except no fruit and not as veggie heavy as the above (still plenty though).
Snacks include fruit (apples can also get a bit of cinnamon or some peanut butter or something if desired), fruit smoothies (we use just fruits, no yogurt, milk, sweeteners), raw veggies, cheese, the occasional peanut butter on toast, etc. Topping the list (definitely LO's favorite) are energy bites (LO calls them peanut butter honey cookies). Nuts are popular if you can eat them (we can't).

If you like stuffed peppers: prepare as you would, but substitute mashed cauliflower (steamed) for white rice and try to use a homemade red sauce instead of jarred. Also, still use full-fat cheese, just less of it.
Trader Joes has some good simple meals that I love. Their frozen pizzas, mini beef tacos, and chinese stir fries are delicious. I usually make those as the main course and add salad, rice/beans/salsa, and steamed jasmine rice on the side. I also love making omelettes with lots of veggies like mushrooms, spinach, onions, and tomatoes. I use 1 egg and 2 egg equivalents of egg beaters. Snacks I like are usually fresh fruits, yogurt, protein bars like Quest or Larabar, and baked chips.

I've always heard great things about Trader Joe's but we don't have one near us. We are just getting a Costco though!
(Not necessarily healthy eating, but a rant) You know, I thought I was going to be super excited about Trader Joe's, but some of their stuff is so so hit or miss and we've thrown a lot of food out from there. I love their frozen macaroni, orange chicken, and low fat guac. People really rave about the cookie butter- I have a sweet tooth, and I don't get it at all. Their chicken fried rice is also something someone swore by- the chicken was gray and weird. Same goes for the pot stickers and enchiladas. I always got bummed that it wasn't closer by, but now I'm just sort of meh about it.
I eat a ton of rice and bean based meals. I am vegan, DH and DD eat chicken but not really any other meat. I usually add garlic, onion, sweet peppers, and spices to the beans. I also love quinoa and squash, vegan pancakes, baked potatoes with broccoli, Amy's frozen vegan pizza. For snacks I love sugar snap peas, carrots, sweet peppers, hummus, and apples. If I have a sweet tooth I drink almond milk with cocoa and raw sugar or So Delicious coconut based frozen ice cream- my favorite being the cookie dough. Breakfast is usually oatmeal or vegan frozen waffle and coffee with almond milk creamer.
