I actually forgot it was holy week. I'll have to tweak Thurs and Frid meals to be meatless.
Sun- chicken caeser salad Mon- turkey breast with mashed potatoes and green beans & stuffing. It's a mini-thanksgiving! Tues- Leftovers Weds- turkey burgers with oven roasted potatoes Thurs- Rigotoni with broccoli and chicken Frid- Leftovers

Today and tomorrow: fish, fries, coleslaw Tuesday and Wednesday: potato and prosciutto frittata, salad
And that's all I've got. I had originally planned a chicken stirfry with rice for Thursday and Friday but forgot that Friday has to be meatless. Will have to rethink my plans a little.

Monday: Burgers on the grill Tuesday: Pork Chops and mashed potatoes, veggies Wednesday: Shake n Bake Chicken and veggies Thursday: Going out somewhere probably because we're leaving Friday morning and I don't want to have a kitchen to clean Thursday night when I'll be worrying about packing Friday-Sunday: We'll be out of town so probably a lot of eating out.
Mon- tacos at my parents Tues - out for book club (leftovers or whatever my h decides at home) Wed - Salami/mozzarella calzones Thurs - fish/shrimp Fri - Sun - out of town lots of drinking and yummy foods to be had.
I did two weeks worth of meal planning today, but nothing exciting.
Enchiladas Hamburgers Pizza Pasta Cheesy Garlic Chicken Strips Hot dogs More stuff I can't remember at the moment. I'm usually a little better at meals that don't sound like we are eating off the kids menu, but I didn't feel like adulting more than necessary today. Meal planning and two hours of grocery shopping/errands was all I could manage.
We are not Catholic so we don't have any meatless days or other restrictions to work around. We plan on going to Good Friday services and Easter Sunday service. We aren't traveling to be with family this year so we are going to grill steaks and have baked potatoes, salad and rolls for Easter dinner.
I am trying to get better at this meal planning thing but I am late getting started already.
Mon: ate out Tue: Thai curry with fish Wed: nutloaf (already in the freezer) and roasted potatoes Thu: just making a big salad to bring to friends' for dinner Fri: soft tofu stew
Not sure about the weekend yet. We'll be up at camp with the in-laws so I'll have to think of something to contribute.
Ooh, I forgot about the scallop and mushroom risotto from the recipe ugaqueencity shared. I'll have to see if I can get myself to the fish market this week.
