In no particular order - Beef stew with lots of veggies - Honey garlic meatballs with rice (ash's recipe) - Chicken wings with a green salad - Lettuce wraps with ground chicken and rice (need to find recipe)
Sunday: Pan fried chicken and broccoli quinoa casserole (was supposed to be Friday's dinner but I got lazy lol) Monday: veggie Alfredo Tuesday: Hot taco rice Wednesday: Breakfast Sandwiches Thursday: Brats/Hot dogs, green beans, mac n cheese Friday: Basalmic grilled pork, potatoes/carrots on the grill
Yesterday I made roasted chicken with butternut squash, carrots, onions, tomatoes, bell pepper, all roasted until mushy, and then served over (tomato garlic) rice. It was yummy and we have lots of leftovers.
I also made this brunch thing for me and DH that I'm pretty proud of, which was shakshouka (spicy Mediterranean eggs cooked in tomato sauce) with pinto beans. It came out awesome.
No planning for the rest of the week yet. I'll make a list at work.
Oh! Oh! I get to play! I meal planned and went shopping this weekend. In no order: Chicken with lemon spinach rice Creamy herb chicken over rice. Shredded beef taco in the crock pot Garlic shrimp pasta. Tuesday I am going out with a GF for dinner so will let DH figure out what he want to make. I will also cook all of the rice and chicken for the week together so that should save time. I tried to plan things that DD would eat too. There were some recipes that I found that I would like to try but they had some pretty crazy ingredients that I couldn't find in our store. When I go to Omaha I hope to remember about them and will get them there.
