Wednesdays we do dinner at my grandparents so it's a mystery. But carnitas tacos sound amazing. Mind sharing the recipe? Sam loves tacos haha
I don't really have a recipe, I just kind of use whatever I have on hand, but basically I use a 4-5 lb boneless pork butt roast (with lots o' fat for tenderness), then pat on a good crust of rub that I make with about 4 tablespoons salt, 2 tablespoons black pepper, 2 tablespoons cumin, 2 tablespoons chili powder, 1 teaspoon smoked paprika, and 1 teaspoon dried oregano. I give it a quick sear over high heat on all sides in a stainless steel pan and then drop it in the slow cooker. While the pan is still hot, I deglaze the browned bits with a couple glugs of chicken broth because you do NOT want to miss out on those brown bits (my culinary school teacher used to call it Chef's Gold). Then I pour the contents of the pan in the slow cooker along with a small can of El Pato tomato sauce (I can find it in the Latin food section) and a couple quartered onions and 2 jalapenos, chopped in 1" pieces (de-seed it if you are not feelin' the spice). Let it cook on low for 8-10 hours and then remove from the slow cooker. Then I separate the fat because pork tends to have lots of fat (but leave it on when you start cooking, as it helps that connective tissue loosen during the cooking process!) and shred the meat with two forks.
Serve with warm tortillas and your favorite taco toppings!!

Taco salad here! So easy, I used pre-cooked chicken and heated it in the microwave. Throw in bowl with lettuce, shredded cheese, crushed tortilla chips, black beans and corn. Top with salsa and ranch dressing.
