My planning has fallen apart the last couple weeks. So this week I'm prepping using easy to execute meals. - Sun-Tues: store bought rotisserie chicken and couple of salad and veggies precut/bagged and tortilla wraps. - Weds & Thurs: Porkchops with cauliflower - Friday: turkey taco bell tacos with rice
Leo gets whatever he wants from my menu but also as a back up: mac-n-cheese & eggs with turkey hot dogs.
Sunday I made kielbasa lentil carrot onion stew. It was yummy and we ate it all, so no leftovers. Sort of a riff on this recipe that is quick and comes out awesome every time: www.marthastewart.com/341776/lentil-soup
Tonight, we have chicken in the fridge, frozen spinach, rice, will throw that together somehow.
After that... Idk. I might crack open one of my cookbooks for some inspiration.
Ch ate carrots and broccoli tonight- finally, yay. I made a stir fry with chicken, carrots, broccoli, onion, ginger, salt, pepper, cumin, and a tiny bit of honey. I think the hint of sweetness did the trick.

I might have to try honey glazed carrots. Hiding broccoli in his mac n cheese no longer works. But he does seem to like raw red bell pepper.
