I don't have creative ideas because DH cooks or home leftovers (he's a chef) but for those of you looking for a gumbo recipe, here's a really good one I've actually used a few times. It's easy to do bit by bit during the evening and the roux is actually baked - so easy!
Sunday: making homemade pretzels for National Pretzel Day (any excuse) and serving them with Minestrone Monday: Salmon with Dill Yogurt and asparagus (probably grilled as long as it doesn't rain again) Tuesday: Dijon Chicken with Rice pilaf and Green beans Wednesday: beef Strogonoff in the crockpot Thursday: leftovers Friday: Cobb salad with green goddess dressing
I really overdid it cooking at the beginning of last week. We have so many leftovers that I'm not cooking again until Wednesday and even that is one of the meals that we were supposed to have last week! It's damn convenient though since I work a lot this week.

Super simple, just steam and mash like mashed potatoes and season however you like. Doesn't always look pretty, but it is delicious!
We had yummy stuffed burgers on the grill today, and I guess tomorrow I'll have to actually start cooking real meals again. Tuesday: Grilled pork chops and leftover Tabbouleh Wednesday: pasta primavera with asparagus, zucchini and herbs Thursday: grilled chicken over panzanella Friday: fish tacos
kellrr the Hello Fresh meals were great! Worth the $29 (bc of 40 dollar credit). I won't do it weekly but every once in awhile I'll do it. The meals were fairly easy and had enough food for more than 2 servings.
I've been really slacking. Here's the menu for this week: Monday: Thai curry bowls with butternut squash and black beans Tuesday: Tecate steak tacos Wednesday: homemade pizza with capicola, corn, and scallions Thursday: mini turkey meat loaves Friday: dinner out (our local blues festival is going all weekend, so probably turkey legs and nachos) Saturday: dinner out Sunday: breakfast for dinner with homemade biscuits and gravy

Monday - We ate corn dogs from A&W..so naughty Tuesday - Baja fish tacos with slaw and avacado spread and roasted asparagus (so yummy!) Wednesday - Baked Salmon with veggies and yukon potatoes and roasted brussel sprouts (our grocer is selling Fresh pre portion packets you can throw in the oven. Giving it a try!) Thursday - hungry girl Buffalo chicken salad wraps with celery, carrot sticks and maybe a side salad friday - Eating out - H has a work outing at the ball park so we will be tailgating Saturday - Eatin out - We have a big family reunion type thing at the ball park AGAIN so tailgating 2 days in a row. Bad eating days
