M-W: Leftovers! We have chicken casserole, sausages and ribs to get through. T: Salsa chicken with rice F: Some kind of fish. Probably tilapia with pierogis and veggies. S: We're celebrating St Patty's day with friends so beer and some kind of Irish food. S: Celebrating DH's Aunt's birthday, so cake!
Diet wise this is not going to be the greatest week...at least not in terms of dinner.
Sun: One pot enchiladas Mon: DH is out, but I baked eggplant today to try to do something crafty with it tomorrow Tues: Rigatoni, homemade meatballs, and fresh ricotta Wed: I'm out, but I'm making short ribs, gruyere polenta, and spinach for DH and my mom Thurs: Something with salmon Fri: Sushi Sat: TBD

jellykat2 no shame: I was just thinking taco salad sounded awesome! I like this thread because I get ideas. I keep a list on my phone of ideas for when we get in a rut. I'm also adding Tuna Melts to my dinner list TheMooseIsLoose ! Also, reading this reminded me I'm doing fish on Fridays for lent. Guess I'll be reworking the menu. darwinfish ratatouille? We have a man cold in the house, so we made a lot of chicken and vegetable soup to eat for the next few days. There are hot dogs in the refrigerator for when we get sick of soup.

I'm so glad someone else remembered to start this thread. I've been meaning to, but we've been cycling through colds in our house. So long as I feel like cooking, this is what we're having this week:
Sunday: Chicken breasts with apple curry sauce, wild rice pilaf, and peas. Monday: DH works late at a special clinic, so probably leftovers for me unless I feel like packing the baby up and getting Panera. Tuesday: Homemade tomato soup with alphabet noodles, and salami/provolone baguette sandwiches. Wednesday: DH will make stir fried beef and snow peas over rice for us! Thursday: Verde salsa chicken in the crockpot Friday: We'll probably get take-out, but it has to be vegetarian or fish b/c Lent. Saturday: I'm going out for a girl's night with friends! Don't know what DH will eat.

I totally forgot that I've got Avacados that need eaten, so for lunches, I'm going to make a pot of broth and then use left over chicken from tonight, or shrimp I've got in the freezer. Recipe:
